For this installment of our Classic Restaurant Revival Series, we are pleased to present Chef Katy Sparks in a revival of an iconic American restaurant, Quilty's. Katy Sparks is the owner and chef of Katy Sparks Culinary Consulting, an award-winning chef and author of Sparks in the Kitchen in collaboration with the legendary editor, Judith Jones of Knopf. As the Executive Chef of Quilty’s, she was awarded Food and Wine Magazine’s Best New Chef of New York in 1998.
Also in the kitchen for this exciting revival will be Chef Kevin Roth of La Estacion in Puerto Rico, one of our favorite restaurants on the island! Kevin was the original sous chef of Quilty’s, and has maintained a connection with Katy since 1996. Several of the courses will include his contributions, and a notable Caribbean flair.
As always, there will be plenty of wine and merrymaking of the kind we are known for at every Chef's Dinner Series event! About the Chef:
Katy Sparks grew up in Vermont’s Champlain Valley where her family raised grass-fed beef and free roaming chickens. As an amateur naturalist, she learned to forage for wild, edible things at her father’s knee and is devoted to all things local and delicious. And in a full circle way, Katy recently relocated from Brooklyn, NY back to New England where she and her husband live full time in the Berkshires of western Massachusetts.
Her first job in NYC was at the legendary Quilted Giraffe under Chef/Owner Barry Wine. From there she was enlisted to open Mesa Grill with Bobby Flay who subsequently asked her to helm his Spanish-inspired bistro, Bolo until she was hired as the Executive Chef to launch Quilty’s where she was awarded Food and Wine Magazine’s Best New Chef of New York in 1998.
Katy is also an active board member of a regional non-profit named Berkshire Grown that works to “keep farmers farming”! She is also hosting and producing a regional video series: Edible Natural World on YouTube that celebrates farmers and artisanal food makers.
Kevin Roth began his career in the kitchens of San Francisco alongside of Wolfgang Puck and Bradley Ogden, founders of New American cuisine and pioneers in the farm to table movement. In NYC, Kevin Roth teamed up with Katy Sparks to open Quilty’s in Soho, and then became the Executive Chef for Coup in the East Village. While in New York, Chef Roth’s cuisine was cited several times in the New York Times, Daily News and the New York Post. At his much-loved restaurant La Estacion, Kevin combines his love for Puerto Rico and passion for barbecue, creating a new style of cuisine he’s termed Nuyorican BBQ.

Do you accommodate dietary restrictions?
- Yes. Please email Info@ChefsDinnerTableNYC.com with your dietary needs with at least 3 days notice. With less notice, we will undertake our best effort (but cannot guarantee) to accommodate your dietary restrictions.
Is there a dress code?
- Nobody will be barred at the door for their garb (unless they come in tank-tops and sandals!). The tone of the evening will be somewhere between smart-casual and elegant. Men are encouraged (not required) to wear a dinner jacket. Ladies will no doubt take the opportunity to impress each other. You are free to make your own choices in the context of the above.

What is the refund policy? Is my registration/ticket transferable?
- While tickets are not refundable, they are transferable to anyone of legal drinking age. If you are unable to use your ticket, we will undertake to re-sell your ticket on a best-efforts basis subject to a 20% service fee.
Do I have to bring my printed ticket to the event?
